Mini Apple Pies

The simplest apple pies you will ever make - but simple doesn't mean it won't also be delicious! Best enjoyed with a warm cup of green tea, and perhaps a scoop of vanilla ice cream on top as well ~
Ingredients
Pie Crust:
57g sugar
180g all-purpose flour
Pinch of salt
85g butter, softened
1 full egg + 1 egg yolk
1-3 tsp water
Filling:
1 apple
40g sugar
Topping:
1 egg white
Instructions
Preheat the oven to 375°F and prep a silicone sheet on a tray.
Prep the pie crust: combine all the dries and then add all the wets (except the water). Mix (preferably with your hands) and add 1 tsp of water at a time as needed until the dough feels soft, but not sticky. Set the dough aside to rest.
Prep the filling: wash your apple and remove the seeds. Then slice it into small chunks and place them into a mixing bowl with sugar and toss the apples pieces until nicely mixed.
Roll out the dough and cut out your heart shaped crusts. Each bottom crust will be a full heart, but each top crust should have two little slices cut into it. After sealing each mini pie with a fork print pattern, wash the top of the pies with the remaining egg white.
Bake in the center of the oven for about 15-20 minutes.
The pies are done when they are a rich tan color around the edges and you can begin to see bubbling sugar & apple through the little cut holes in the crust
Remove the pies from the oven and allow it to cool for 5-10 minutes.
