Apple Roses

The cutest little homemade apple roses made with a crispy puff pastry exterior and a sweet & tart apple interior. Though they may take a little bit of time to prepare, they are still quite easy to prepare and make for the most lovely pastries to bring on a spring picnic.
Ingredients
Puff Pastry:
2 Tbsp sugar
120g all-purpose flour
1/4 tsp of salt
113g butter (cold)
~ 1/2 cup of cold water
Filling:
2 small apples
1 Tbsp of lemon juice (optional)
brown sugar
cinnamon
Instructions
Prep the puff pastry: add the flour, sugar, salt and sliced cold butter to a food processor. Pass the mixture only until it looks like chunky sand (over-passing it will melt the butter and it will look like a paste instead.. we don't want that). Then transfer the sandy mix into a mixing bowl and slowly add a spoon of water into the mix just until it can clump together into a nice dough ball (do not knead the dough as your warm hands will melt the butter) - just wrap the ball in a cloth and store in the refrigerator.
Prep the apples: wash your apple and remove the seeds. Then slice the apples into very very thin slices and place them into a bowl containing boiling water with a few drops of lemon juice (lemon juice is optional). Allow apple slices to sit in the hot water for no less than 10 minutes.
Preheat the oven to 370°F and prep a cupcake tin by lightly buttering each mold.
Roll out the dough and cut out 1.5 inch-wide strips of about 1 foot long. Pat dry about 6-8 slices of apple and lay them out along the length of the puff pastry. Then sprinkle them with sugar & cinnamon. Lastly, fold the pastry in half length-wise and roll the pastries (watch my YouTube vlog linked below to better understand this step).
Place each rose into a cupcake tin and bake in the center of the oven for about 15-30 minutes (until the puff pastry is a lovely golden color).
Remove the pies from the oven and allow it to cool for 5-10 minutes.
